Kamayan Bagoong Balayan is fermented for a number of months with only the best anchovies. The sauce, which has a spicy fish flavor, can be used in a variety of ways, including as a salad dressing or a condiment for Filipino and Asian dishes, like pancit.
Bagoong Balayan is not to be confused with the fermented shrimp paste bagoong, which you can find here.
