Quick history lesson (but don’t worry – we promise we won’t pop quiz you): Queso de Bola is a product of Holland that made its way into Filipino holiday tradition through trade during the 1600s, when the Dutch were at war with the Spanish, and the Philippines was under Spanish rule. Originally called “Edam,” named for the town in the Netherlands that it comes from, Filipinos refer to it simply as “Queso de Bola” or “ball of cheese.”
