Flat Tops by Ricoa
Ricoa was the first company to make chocolate in the Philippines, and is creator of the famous Flat Tops and Curly Tops chocolates.
While they may look very similar, Flat Tops and Curly Tops likely have different formulas due to differences in the quantities of sugar, salt, and cocoa used, as well as the roast level of the cocoa beans.
The darker hue of Curly Tops may indicate that more cocoa is used, or that they are manufactured from darker-roasted cocoa beans. Flat Tops are brighter in tone and more robust in texture.
Curly Tops highlight the cocoa with a very mild saltiness and have a strong aftertaste. Flat Tops accomplish this with sugar, which adds sweetness to the mildly roasted cocoa.
