Tapioca Pearl (Sago) by Lucia
Tapioca pearls, also known as boba or sago, are small translucent balls of goodness. It is made up of cassava starch and water. These are dried tapioca pearls, so here's some cooking tips:
- Do not wash or rinse tapioca pearls before cooking. Place it directly in boiling water.
- You'll know it's cooked when you don't see a white, opaque center.
- Use a lot of water, and it's okay to keep replacing the water as they become starchy.
