Summer continues to scorch the neighborhood, leaving us craving for dishes that are light and fresh. Upon our search, we found an amazing and simple recipe from one of our Instagram friends, @gwiyomi27, who was delighted to share her recipe with our community. This refreshing salad can be served on its own, on top of rice, or with grilled/fried dishes. It's versatility makes it a great accompaniment for any meal.
1 Large green mango
3 Medium sized Roma tomatoes
1 Large Cucumber
3 Spring Onions
1 Can Whole Kennel Corn
1 Meidum Size Onion (Red or White)
Salt and Pepper to taste
Optional: Add bagoong (shrimp paste) to add a kick of flavor
Peel and chop mangoes and cucumber into small cubes and place into a bowl
Chop tomatoes and onions into small cubes and mix with mangoes and cucumber. Add to bowl
Add corn and spring onions
Add salt and pepper and stir to coat the salad
Serve and enjoy
